Chicken Sausage Flatbreads Recipe
Chicken Sausage Flatbreads with Broiled Zucchini and Fresh Oregano
Ingredients:
2 Zucchini
Oregano- Fresh or Dried
Italian Seasoning
1 lb of Italian Chicken Sausage
Flatbreads or Naan
Crushed Tomatoes
Mozzarella Cheese
This recipe is not an exact amount, I just sprinkle on to my liking, you can’t mess it up so just measure with your heart!
Directions:
Preheat Broiler to high and slice zucchini into rounds. Rough chop your oregano if using fresh.
Place zucchini on a lightly oiled baking sheet. Season with salt, pepper and Italian seasoning. Broil until softened, about 5-7 minutes. Remove from broiler and adjust oven temp to 450 degree.
Brown your sausage and sprinkle in oregano. Meanwhile, place flatbreads or naan on a second lightly oiled baking sheet. Toast in oven until lightly browned, 5-7 minutes.
Assemble your flatbreads- spread tomatoes in thin layer on toasted flatbreads. ( I used home canned whole tomatoes and gave them a light pulse in the blender to help break them up. The mixture was still chunky). Season with salt, pepper and Italian seasoning. Then evenly top with mozzarella cheese, sausage and zucchini.
Bake your flatbreads until golden brown at the edges and the cheese is melted, 4-6 minutes.
Finish and serve by sprinkling more oregano. Cut into slices and serve.
